CALENTITA

  • 250g chick pea flour
  • 1 litre water
  • olive oil
  • salt & pepper

Mix chickpea flour & water & salt/pepper in a bowl. Leave to stand. Preheat oven to 175C. Take a tin 9x6 inches (15x23cms) or oven dish. Put enough oil to cover bottom of tin or bowl. Heat in oven. When hot,. spread oil up sides of tin with a pastry brush or by tilting. Stir mixture & pour immediately into tin & put back in oven for 1 hour appx until set in the middle. Good for two or three servings.

While the recipe is unique to Gibraltar, look again at the ingredients- this recipe probably evolved during the Great Seige when those were the only ingredients to hand. As such, this recipe is as much a symbol of our national struggle as anything else.
